Sweet Pumpkin Biscuits with Lemon Buttercream Frosting

What better fun on a chilly Saturday than having a pumpkin carving party!

I’ve been pretty excited about carving a jack-o’-lantern…even though I can’t remember if I’ve
ever done it before. Possibly once. But one time does not make one experienced, not in the least.
Thankfully, I had my hubby to help guide me and scoop out all the icky stuff inside the pumpkin!

For our party, we made Sweet Pumpkin Biscuits with Lemon Buttercream Icing and
Spiced Cranberry Lemon Iced Tea a truly delectable combination.

Gluten-Free Sweet Pumpkin Biscuits with Lemon Buttercream Frosting

1 1/2 cup rice flour
1/2 cup oat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon xanthan gum
1 cup of pureed pumpkin
1/2 cup brown sugar
3/4 cup vegetable oil
1 egg
1 tablespoon cinnamon
1 teaspoon pumpkin spice
1/4 cup fancy molasses
Mix all dry ingredients together. Whisk eggs and sugar,
pour into dry mix. Then add pumpkin and molasses. Mix well.
Drop tablespoon sized mounds onto greased baking sheet.
Bake at 350F for 15-18 minutes.
Let cool for 5 minutes before frosting the biscuits.
Lemon Buttercream
Three cups confectioners sugar
1/2 cup softened butter
1 teaspoon vanilla
2 tablespoons water
2 tablespoons squeezed lemon juice

It was such an enjoyable way to spend the afternoon.  Little A. was quite taken with these tasty biscuit-cookies and was such a curious bunny when it came to the pumpkin carving.  You see, he chose our perfect pumpkin when we visited the pumpkin patch and now he wondered why we were busying ourselves with poking and prodding it?  Mr. Smith held him up so he could see what the fuss was about and he sure was pleased as a peach when he got to put his hands in the pumpkin mess himself.

After all the muck was out of the way, it was time to get to carving.  I used a sharpie marker
to outline a not-too-scary face and got to work.  It’s not as hard as I imagined it to be…
that said, it does take some serious maneuvering!  I think if I wanted an intricate design,
there would be stencils and special cutting equipment involved.
It was a messy and amusing activity – treats, a few tricks, iced tea and good ol’ weekend family fun.

Spiced Cranberry Lemon Iced Tea

A pot of boiled water
2 sachets of cinnamon spice tea 
2 halved lemon slices
12 frozen cranberries
pinch of all spice
Brew tea in two mason jars or heat proof glasses. 
Add two halves of lemon slice,
 6 cranberries and a pinch of all spice to each jar.  
Refrigerate for half an hour. 
Serve with ice. Enjoy!

  5. Wonderful biscuits. I made banana biscuits some time ago to mixed reviews, but I’m sure everyone loved your pumpkin version. I especially love the photos of your pumpkin carving!
