Gluten-Free Fruit Sandwich

Yesterday, my husband surprised me with a fruit sandwich for lunch.  He’s one creative guy in the kitchen and comes up with the most amazing culinary ideas. Most of the time they are genius, like this apple strawberry cheddar sandwich. Seriously scrumptious!  He  sauteed the apples, made a strawberry coulis, and combined them both with sharp cheddar over toasted gluten-free grain bread. Major Yum!

On another note, can you believe that it’s March 1st? I feel like February just flew on by! It’s hard to believe that we’re getting closer to Spring, because outside it’s snowing, there is fresh white fluffies all over the ground and not a daffodil in sight. Le sigh.   Winter, you’ve been lovely (sort of), but we haven’t seen the sun in days… so I think it’s time to skedaddle.

I would love a bunch of cherry blossoms and willow buds too! How pretty.
And, this office space is inspiring me to spruce up my own with fresh Spring colors.

    Wow never thought of a ‘fruit sandwich’ before. Great idea. Love it when hubbies get their skill juices going- they come up with the funest things. Mmmmm must try this soon. It’s cold here as well and I’m also dreaming of some sun, some flowers, a weekend getaway perhaps! Oh and btw, my hubby wasn’t quiet sold on those pants, but I coaxed him somehow 😉
