Gluten-Free Classic Vanilla Cake + Giveaway*closed

Are you a cake mix type of gal? If yes, than this is a great one to try. I tested Pamela’s Classic Vanilla Cake + Frosting Mix over the weekend and was pleasantly surprised with the results. Of course, it’s gluten-free, with organic ingredients too. I substituted some of the required liquid amount for strawberry puree (1/3 cup for the cake, 4 Tablespoons for the icing), which made the cake a pretty soft pink and added a hint of strawberry flavor. It also made it look super girly, which I liked – and the boys didn’t mind one bit!
Pamela’s Products have been around since 1988. They are a range of allergen-free and depending on your dietary needs, you can select a product using this handy guide. I made this cake using coconut oil, so it would be dairy-free and it turned out fluffy and moist.
For the icing, I also used coconut oil (I refrigerated it for 10 minutes, just to get the same consistency as margarine), and instead of adding the recommended amount of water to the mix, I added strawberry puree. It tasted delicious as is, and the strawberries just complimented the vanilla perfectly.
I used two wooden skewers, some craft string and individual foam letters to make a decorative banner and surprise Mr. and Little Smith with a sweet treat. I got the desired effect; smiles all around.

I don’t have Celiac Disease, but I do have a gluten intolerance and experienced many of the similar symptoms as those with Celiac do, before having finally been properly diagnosed.
