Gluten-Free Mushroom Goat’s Cheese Burger

Happy Saturday Y’all! It’s a gorgeous, sunny, hot day here and I’m loving it :)  Mr. Smith, Little A. and I were out and about at the park, walking and garage sale hunting for the last couple of hours. We had so much fun – until we ran out of hydration and needed smoothies and water asap!  So we came home and made a delicious mango berry smoothie and drank a ton of water. With the heat and the smell of Summer in the air, I think it’s a great evening for some grillin’. I made this recipe a while a go and posted it on my facebook page, but in case you missed it,  I wanted to share it again!  Because it’s sooooo delicious.

Mushroom Goat’s Cheese Burger w/ Gluten-Free Buns

1 1/2 pounds extra lean ground beef
(or lean ground turkey)
1 tsp dried parsley
1 tsp dried oregano
1 tsp red chili flakes
4 Kinnikinicks Gluten-Free Soft Buns
2 vine tomatoes, washed and sliced
1 quart of mushrooms, washed and sliced
2 Tablespoons olive oil
1/2 cup creamy goat’s cheese
salt and pepper
  1. In a large mixing bowl, combine ground beef with parley, oregano, and chili flakes.
  2. Make 4 large patties and grill for 5-6 minutes on either side, until cooked right through.
  3. Heat olive oil in medium sized pan, add in mushrooms and a bit of salt and pepper.
  4. Sautee until golden and cooked, approximately 8-10 minutes.
  5. Serve hamburger patties on soft buns, dress with mushrooms, tomatoes, and goat’s cheese.
  6. Add extra condiments if you wish.
  7. Enjoy!!
