Gluten-Free Vegetarian Pizza

Over the weekend we made pizza. What is it about pizza that’s just sooo good? The combination of toppings, the fun of making it, the childhood memories, the simple deliciousness of it’s entirety. I don’t know – it just is.  

Sometimes we make pizza dough from scratch, sometimes we buy prepared gluten-free crusts and just add the toppings.  Udi’s gluten-free pizza crusts are sold at our local health food store and grocer, so they are a great choice for us when we need dinner on the fly. They come two in a pack and only take 8 minutes in the oven!  From prep to table, in twenty minutes. Nice.

For a healthy pizza, try skipping the cheese and using a gluten-free crust like this one by Udi’s, made with brown rice and tapioca. Add your favorite toppings – like, a drizzle of olive oil, fresh basil leaves, tomatoes, kalamata olives and rosemary. Bake for 8 minutes and broil for 1-2 for a golden brown crust.
Enjoy with a glass of organic ginger ale. Mmmmmm….c’est bon!
