Kale and Blackberry Smoothie

Woo-hoo, it’s Friday and time for a super weekend! Tomorrow is Cinco de Mayo, will you be celebrating? It’s been a fun week for me – baking this cake, planning my indoor botanical garden, and guest posting on Second Street East. Unfortunately, it hasn’t only been peachy, because I’ve been having sciatic pains, and a major crick in the neck. Is it too much baby lifting? In spite of the pain, I’ve had a great week – how about you?
Today, I made a super scrumptious smoothie for lunch – jam packed with goodness, it even astounded me how delicious it was. Little A. took it down like it was the best thing ever! You know what that means right? This smoothie scores double points because it’s a sneaky way of getting Little A. to have more veggies!!  He loves his dark berries, cherries, apples, and a few carrots, broccoli tops, and asparagus tips. However, seeing him guzzle a smoothie full of kale, made me oh so happy!
KALE + BLACKBERRY SMOOTHIE
makes two servings
 
2 cups of kale leaves, chopped
1 cup of blackberries
1 sweet apple, sliced finely
1/3 cup grated carrots
2 Tablespoons of chia seeds
1 1/3 cup of coconut milk
4-6 ice cubes
Wash and prepare fruits and vegetables. Place kale and blackberries in the blender with coconut milk. Blend on high 2-3 minutes. Add in apples and carrots. Blend until smooth. Add in ice cubes and chia seeds. Use frozen drink setting (or ice crush) – blend for another 1-2 minutes.   Serve in highball glasses and enjoy!

I’m excited to share this recipe with my sister, Jess, because she’s the one who first gave Mr. Smith and I the low down on the benefits of kale. Adding dark berries and chia seeds to the mix makes this a super smoothie for real!

  1. This smoothie looks incredible! I make most of my smoothies with the nutrient king that is kale but have never thrown blackberries into the mix. This is definitely going on my to try list! x

  2. I just made this smoothie for Mom and I. There is no denying it’s kinda on the chunky side but I’m really truly surprised how good it tastes. The blackberries really come through as the strongest flavour. The chunkiness might be because I didn’t properly observe your blending in three part directions – I just threw all the ingredients in together.. or maybe the blender isn’t has powerful. I’m still impressed nevertheless.
