Nutty Sorbet with Mango and Flax Seeds

It’s been a busy week and it’s only Wednesday.  Banking, check. Mechanic’s, check. Dentist, check. There’s plenty on the to do list, that’s for sure.  On the bright side, there’s always sorbet. By that I mean sorbet is a good reason to slow down, pause, enjoy and then get back to the schedule.  This recipe is super easy to whip up, it’s totally delicious, plus it’s packed with healthy goodness. As I’m writing this, I want to go blend up some more...it’s that good.

Nutty Sorbet with Mango and Flax Seeds
Serves 4
3 cups of frozen mango cubes  (chop ahead and freeze or use flash-frozen fruit)
1/2 cup chopped green melon
1 cup of unsweetened almond milk
2 Tablespoons of lime juice
2 Tablespoons flax seeds
1 Tablespoon of pure maple syrup, optional.
  1. In a food processor or blender, place frozen mangoes and almond milk.
  2. Use ‘ice crush’ option for 2-3 minutes.
  3. Blend on high, until smooth.
  4. Add in green melon, lime juice and flax seeds.
  5. Blend on medium-high for 1-2 minutes.
  6. Stir in maple syrup or blend for 30 seconds more.
  7. Serve right away in dessert bowls. Enjoy!

    what a super interesting combo of flavors Emily! blended goodness is something i feel is extra do-able; especially with such busy schedules…like you’ve been on lately. yipes! i feel rather whirly myself and could use a nice, fresh sorbet like that.

    you know, today at work one of the guys brought in his magic bullet and was making a berry smoothie with hemp protein powder. i was asking him about it and the benefits sounded amazing, gonna have to check into it further.
