Beanfields Crispylicious Chips + Avocado Dip

I don’t have to tell you just HOW much I love avocados…but here’s a little refresher: I LOVE AVOCADOS. They are super delish in smoothies, on sandwiches, homemade ice cream – and of course guacamole! This smooth avocado dip is essentially a whipped guacamole; it’s really tasty and it complements the bean and rice chips wonderfully. Oh gosh, it’s 8pm and all this talk about chips and dip is tempting me to have a late night snack!!

Avocado Dip
Serves 4
2 medium avocados, diced
1 vine tomato, diced
2 cloves of garlic, minced
1 wedge of lime
salt & pepper
- Wash and prepare avocados, tomatoes and garlic.
- In a food processor or blender, place avocados, tomatoes, garlic, add squeezed lime juice and dash of salt and pepper.
- Use whip or puree option and blend until smooth.
- Transfer to serving dish and enjoy with bean and rice chips, brown rice crackers, gluten-free toast.

Unfortunately, my Mr. Smith is allergic to them and we can not have them anywhere near the house. This looked like a wonderful recipe though! I will have to send it to my mom to try.
