Cherries and Berries with Coconut Whip

The Summer brings gorgeous, fresh fruit. Indulging in big bowls of berries is one of my favourite things to do! I can thank my mom for that family trait. When it’s heating up outside, cool treats are where it’s at.  So, we keep colanders of berries in the fridge for easy snacking.  For this afternoon delight, I opened up a can of full fat coconut milk that I refrigerated overnight and scooped the rich cream off the top of it. Then, I whipped it and topped it with a dash of cinnamon. Incredibly simple; magnificently delicious and healthy. Happy snacking!

    Oh yum that sounds so refreshing and good! The house we’re renting has raspberry bushes all along the side fence- I’ll have to try this once they are ripe!

    Blueberries and cherries are two of my favorites. I’ve never tried whipping coconut milk. Looks lovely and refreshing.

    This reminds me of the “Dolewhip” you see all over Hawaii and Disneyland (2 of my favorite places!)
