Super Smoothies :: Strawberry Oatmeal

I guess it’s been a strawberry sort of week. I’ve been adding them to everything and it just feels right. Maybe I’m craving potassium and magnesium (there is 220 mg of potassium in one cup of strawberries!)… This smoothie is an ideal breakfast – because it’s essentially breakfast in a cup. I like hot oatmeal, but not really during the warmer months, so what I love about this smoothie is that it tastes like oatmeal, but it’s chilled and delicious! Strawberry Oatmeal Smoothie
Serves 1
1 cup of coconut milk
1 cup of strawberries (fresh or frozen)
1 Tablespoon of virgin coconut oil
1/2 cup of gluten-free oats
2-3 ice cubes if using fresh berries
- Place all ingredients in the blender.
- Use ice crush mode to break down frozen strawberries or ice cubes.
- Then blend on high for 1-2 minutes until smooth.
- Enjoy!
