Skinny Peppermint Patty Shake

 
 
If you like peppermint, then you will love this. It’s refreshing, lick your lips delicious, and reminds me of mint chocolate chip ice cream. These are all good things.  How did this shake come about, you ask? Well, I was attempting to make homemade peppermint patties, which were quickly turning into a disaster, when I decided to switch gears and use the ingredients to make a ‘milk’ shake instead.

Have you done that before? Throw in the towel and try a totally different direction. It’s pretty rewarding when it works out. So what if I couldn’t mold perfect little patties out of pure coconut oil and chocolate…they had other plans all along. Thank goodness too, because otherwise I never would have discovered such a thrilling, healthy dessert. Win-win. 

 
 
Sipping on this peppermint patty shake is such an indulgence; with zero guilt. That’s right, there is no sugar in this recipe. Holla! Cue happy dance. Just pure goodness for your taste buds to rejoice and enjoy.  This year, it’s my St-Paddy’s day drink of choice 🙂  Though it may not be green, it’s definitely something I want to chug-a-lug!
 
 
And for the kiddos, I promise they’ll go crazy for this shake. It’s minty, frothy, creamy and downright tasty. They’ll seriously mistake it for ice cream! Good plan, right?  No sugar melt-down in your future.
 
What are your plans for this Sunday? Is anyone going to see a live band on St-Patrick’s day? There are tons playing in the city this weekend.  We’ll certainly be dressing in green for the occasion, my husband is Irish so there’s no sitting this one out.

Description

Enjoy your favorite peppermint patty treat in the form of one healthy shake! Skip the sugar, and you’ve got yourself a guilt-free indulgent beverage. Yum!!


Ingredients

Scale
  • 5 squares of unsweetened chocolate (like Camino’s)
  • 2 Tablespoons of pure virgin coconut oil
  • 2 cups of unsweetened almond milk
  • 1/4 cup of unsweetened shredded coconut
  • 4 teaspoons of organic mint extract
  • 1 very ripened banana
  • 15 ice cubes

Instructions

  1. In a saucepan on low heat, melt chocolate and virgin coconut oil until smooth.
  2. Add in 1 teaspoon of mint extract.
  3. In a blender, combine unsweetened almond milk, shredded coconut, banana and 3 teaspoons of mint extract. Blend on high until smooth.
  4. Add in 15 ice cubes and blend until ice cubes are broken down (2 minutes on frozen drink mode).
  5. Add chocolate sauce into the blender and blend for 30 seconds more.
  6. Pour into serving glasses.
  7. Using a spatula, scrape the saucepan and drizzle the left over chocolate sauce on top of the peppermint patty shakes.
  8. Serve and enjoy!

Em, i LOVE these photos!!!! they make that shake look so super delish, which there’s no doubt it is. and thanks for saving me from having to rely on something called a Shamrock shake….you just never know what’s in that stuff at MD’s right? oh boy, i am wishing this mint sensation was in my hands right this minute. way to turn nothing into something – bravo!
