The Ghost of Gluten-Free Past

I was a teenager when we figured out that I had a sensitivity to gluten. Fifteen years ago, you couldn’t find gluten-free products in your regular grocery store. I remember my first trip to the health food store with my mom, resulting in the purchase of a very dense, seed bread and a whole bunch of gluten-free flours to try baking with. There were very few ready-made products available and only a handful of baking mixes to choose from. The worst part was that even the items you did purchase, were often lacking in taste. Especially as a teen who wanted all the typical teen-loving carbs like pizza, bagels, pancakes. It didn’t leave much choice. Thankfully, my mom is a great baker and started to make some gluten-free baked goods that turned out pretty good, considering the limited ingredients available (it makes me chuckle to reminisce on all of our mishaps in the kitchen, trying to figure out how to bake gluten-free!).

Over the years, I’ve tried many gluten-free store all-purpose flours, mixes, and store-bought goods. Some were just a complete waste of money. They didn’t even taste remotely like what they were suppose to be. Yuck! There is nothing like spending double on a product because you have a food sensitivity, only to bite into something that feels like dust in your mouth.

Thank Goodness For Delicious Gluten-Free Food

I have a handful of brands that I can count on for great tasting gluten-free options, which includes President’s Choice®. I remember the first time I had one of their baked gluten-free cookies….Mmmmmm, were they ever good!

One common complaint with gluten-free foods is their lack of “fluffiness” and volume. Well, I can assure you that these gluten-free buttermilk pancakes hit a fluff and flavour home run! I’ve always been more of a crepe or oatmeal griddle pancake kind of girl, but my husband loves a good old-fashioned flapjack pancake – which can be tricky to make gluten-free. He was the ultimate taste-tester for this recipe and his verdict is strong. He said, with a mouthful, “These are the best pancakes ever!” 

To which I said, “Excuse me?”

To which he replied, “Second to yours baby, second to yours.”

Then I had a few bites –  and while my chef’s ego couldn’t take the bump from first, I agreed that these buttermilk pancakes were in fact incredibly delicious!

Flavourful, moist, fluffy, lightly sweetened, golden pancakes. Mmmmmm….

Gluten-Free Buttermilk Pancakes with Strawberries

This recipe is a cinch to whip up, thanks to using PC® Gluten Free All-Purpose Flour, instead of mixing and measuring a whole bunch of different gluten-free flours. Each pancake cooks in approximately 5 minutes and you can have several in a pan at once making wait time (for the kids saying, “When’s it going to be ready!”) relatively short.

Gluten-Free Buttermilk Pancakes

Description

Deliciously tender buttermilk pancakes made with gluten-free flour are a breakfast everyone can get behind! Serve with maple syrup, or with mouth-watering PC® black label fruit syrup.


Ingredients

Scale
  • 1½ (375 g) PC® Gluten Free All-Purpose Flour
  • 2 Tbsp (25 mL) granulated sugar
  • 2 Tsp (10 mL) baking powder
  • ¼ Tsp (1 mL) salt
  • 2 eggs
  • 11/2 cups (375 mL) buttermilk
  • 2 Tbsp (25 mL) canola oil
  • 2 Tsp (10 mL) pure vanilla

Instructions

  1. Preheat oven to 250°F (120°C).
  2. In large bowl, whisk together flour, sugar, baking powder and salt. In another bowl, whisk together eggs, buttermilk, oil and vanilla; pour over dry ingredients. Using wooden spoon, stir until mixture is combined but still has small lumps.
  3. Spray large non-stick frying pan liberally with cooking spray.
  4. Heat over medium-high heat.
  5. Using a 1/4 cup (50 mL) dry measure, pour batter into pan, spacing pancakes well apart.
  6. Do not overcrowd pan. Cook until bubbles appear on top and edge looks set, about 3 minutes. Turn; cook until cooked through and bottoms are browned, about 2 minutes. T
  7. ransfer to rimmed baking sheet.
  8. Place in oven to keep warm while cooking remaining pancakes.
  9. Makes about 10.

  1. We are currently gluten and dairy free. Luckily flours like the one you reviewed are readily available thanks to PC and we have found coconut milk to be a great substitute for cows milk.

  2. I know so many people with food allergies and sensitivities! I think what pc is doing is wonderful. I know the most common complaint is no variety and there’s so many different options now

  3. One of my sons is lactose intolerant but he watches his diet and when he goes out to eat he takes tablets. I was amazed to find how many products milk sugar is in, where I simply wasn’t expecting it – sausages for example. It’s true that you have to read every label when you suffer from something like this.

  4. I know many people with dairy and gluten allergies..I’m excited to pass the info along to friends and family that President Choice is making products specific to these allergies

  5. I don’t nor does anyone in my family have any food allergies but we may be looking into a gluten free diet for my daughter because she is autistic and from what we have read it may make a difference so thought we would give it a try

  8. My sister is gluten free and I’m a vegetarian, so between those kind of things, it’s hard for us to find food. Glad presidents choice is making it a bit easier.

  9. I think its awesome that they are doing this for people with allergies! I recently went for an allergy test, and it came back negative.

  13. I don’t have any personally, but I know a lot if people who do. Food shoukd be enjoyed by everyone equally and it’s wonderful PC is making products for all! Truly appreciated that they are doing this.

  14. Luckily we donèt have much of those, but it is nice to know that there is help for preparing treats for the school, because that became a real problem.

  15. I was a baker at a nut-free bakery in the past, which also provided gluten-free items. It was nice to be able to share sweets with people that have severe allergies. It’s nice to see more companies providing options for allergies.

  16. I honestly believe it is not the gluten we are allergic to it is the chemicals they spray on the wheat. You never heard of gluten allergies till monsanto came on the scene with all the chemicals .

  17. I’ve been buying other brands of gluten freee items since PC’s line up is limited. I have other allergies aside from wheat. I also stopped eating dairy and red meat a few months ago. So when I cook for family & other people to give as gifts, I’ve been cooking them as allergen free to whatever it is I don’t eat or have an allergy to. It is an expensive undertaking as I check for quality of ingredients and buy organic. In the end, what I create is not your regular meal that can be bought at any store and is of a higher quality than what restaurants have to offer.

I am not sensitive to any foods or have any allergies so I personally do not have to watch but I think it is a great thing that gluten free products are made for those who are sensitive to those items. I am all for it and commend the stores for having these products available to those who are sensitive and have allergies.

  19. A have a few allergies, including one that I don ‘t know what it is. I’m starting to suspect coconut milk.

  20. No one in our family has any sensitivities BUT our son has a class-mate with a peanut allergy so it’s awesome that there are now so many choices for “treats” I can pack as a snack for him without worrying about the impact on others

  21. I don`t have any specific allergies that I know of but I have IBS so I have to be careful and I do not what foods are trigger foods for me.

  22. Great timing on this post! I’ve been suspecting that I’m gluten intolerant and am undergoing tests to confirm that. My 2 sisters and one of my brothers are gluten intolerant.

  25. I love the sounds of these pancakes! I have two family members who eat a GF diet so these mixes/flours would be wonderful to be able to allow them to enjoy all the same foods as the rest of our family 🙂
