Remember in this post I promised you more salad recipes? Well, voilà! Today I made a garden salad very much like an Insalata Caprese. Just a few ingredients, that combined together taste superb. Typically, I wouldn’t put carrots in this salad, except I picked up an organic bunch of carrots at the market that were so fresh and sweet, I decided to include them – and it was a wise decision 🙂
I know for many of you, eating healthier is on the list for 2012’s goals. How are you doing with that? We’re doing pretty good in our household. Overall we already eat healthy, but it’s the homemade deserts we love! Right now my biggest focus is drinking more water and getting in the veggies!
Salads are definitely a great way to get your entire daily dose of vegetables in one big bowl! I like to try anything and everything in salads to switch them up so I don’t grow tired. What are some of your favorite ingredients that you would suggest using?
Garden Salad à la Caprese
Serves 4 as starters or 2 main course
1 large vine tomato, cut in wedges
2 organic carrots, chopped and halved
4 fresh basil leaves, chopped finely
10 mini boccaccinis, halved
4 cups spring salad mix
1/4 cup olive oil
2 Tablespoons balsamic vinegar
salt and pepper
Prep the tomatoes, carrots, basil, and boccacinni. Mix together with spring salad in a large serving bowl. In a glass dish, mix olive oil, balsamic vinegar, and a pinch of salt and pepper. Whisk and pour over the salad. Toss and serve!
