Summertime Avocado and Grilled Corn Salsa

Admittedly, barbecuing has mostly fallen in my husband’s jurisdiction of contributing to family meals. Which essentially means that I’ve got the winter months of cooking covered, and then he takes over during the summer. Grilling has been his thing.

Until now. Ricardo Cuisine connected with me and challenged me to try a recipe from their well-rounded catalogue of BBQ recipes. Never one to back down from a challenge, I perused the gorgeous and delicious-looking recipe page and found an appealing appetizer that caught my eye.

Ricardo’s Avocado and Grilled Corn Salsa is bursting with fresh vegetables and colour, which is just the sort of thing I love in a recipe. The combination of corn, avocado, cilantro, lime, and jalepeno, make this dish a taste explosion in your mouth.

Here’s what you’ll need:

  • 2 ears corn, husked
  • 1 firm but ripe avocado, peeled and diced
  • 2 tablespoons (30 ml) lime juice
  • 1/4 cup (60 ml) fresh cilantro, coarsely chopped
  • 1 green onion, finely chopped
  • ½ jalapeño pepper, seeded and finely chopped
  • Salt and pepper

Firstly, if I can make this salsa, you can make this salsa. It’s so simple and truly rewarding! The flavour bursts with each bite and you can feel good about the wholesome goodness that is going into your body.

Very easily, I boiled the corn for a few minutes, dried it off and then placed it on the barbecue.

It only needed to grill for 3-4 minutes before it started to turn golden brown. I took it off and let it cool while I prepared the other ingredients. All in all, it took me around 20 minutes to make this recipe! That is a very small investment of time for something so delectable.

I paired Ricardo’s Avocado and Grilled Corn Salsa with organic blue corn chips and served it alongside a grilled steak –  it was an instant family hit!

As we sat around the patio table in our backyard and enjoyed fresh salsa with our dinner, summer memories were being made. We talked about the activities of the day and our family’s summer bucket list all while enjoying an excellent barbecue meal.

Needless to say, I’ll be trying out more of Ricardo Cuisine’s BBQ Recipes all season long!

    1. Thank you Julie! I thought it might be hard to do, but it was surprisingly quick, easy, and the flavour mix was really good. I will definitely me making it again and trying other Ricardo recipes this summer. (Thank you! It’s nice to be able to shoot pics outside these days)
