  • 1 cup quinoa rinsed and cooked according to package instructions
  • 1 cup chopped celery
  • 1 cup chopped fresh organic curly parsley
  • 1 medium lemon
  • Sea salt and ground black pepper to taste


  1. Cook quinoa according to package instructions. Once quinoa is cooked, cool in refrigerator for at least 2 hours or overnight.
  2. In a large bowl, combine cooked quinoa, celery, parsley and stir in the juice of 1 lemon.
  3. Return to the refrigerator until ready to serve.
