Magical Vegan Pavlova

“Pavlova is the perfect summer dessert because you can top it with your favourite locally grown fresh fruit. I like to load mine up with cherries and nectarines. The meringue is light and airy like a cloud, which is perfect for warm summer days.”

– Jasmine from The Blenderist

Angel Food Cake with Coconut Whipped Cream

“I love this classic summer recipe because it’s a light and airy cake that can be adapted to any flavor the family is craving at the time. “

– Zainab from Blahnik Baker

Cowgirl Raspberry Sparkler

“I love a refreshing porch sipper after a long day of gardening or fun in the sun with the family and this Cowgirl Raspberry Sparkler makes you want to put your feet up and relax. With the Calgary Stampede just over in these parts, this makes for a great summer cocktail. Bursting with fresh raspberry flavor it will make you want to share with some other cowgirls too.”

– Tara from Noshing with the Nolands

Zucchini Bread

“Every summer, there’s always a generous friend or two with an excess of zucchini in their gardens. Instead of making ratatouille, I love to bake up loaves of this terrific, cinnamon spiced zucchini bread. “

– Liz from That Skinny Chick Can Bake

Italian Roasted Eggplant Salad

“I’m a big fan of shirking the traditional supper format (ie., meat & potatoes) in the summer in favour of quick, easy, and no-oven meals. This particular recipe is a different take on a salad and has the approval of the big and little members of our family. More importantly, it’s hearty enough for a stand-alone dish for a light supper, meaning that I spend less time in a hot & sticky kitchen”

– Jennifer from You Pinspire Me

Stuffed Tex-Mex Gold Rush Squash

“I love this Stuffed Tex-Mex Gold Rush Squash for a light and healthy summer meal!  This recipe has a great balance of nutrients and is perfect for gluten-free eaters.  Kids also love eating their food out of edible “boats”, they are pretty to serve and fun to eat!”

– Amee from Amee’s Savory Dish

Easy Strawberry Chia Seed Refrigerator Jam

“To me, the taste of this jam always says “summer is finally here!” The return of local strawberries is always a sure sign that the warmer weather is here to stay (for the next little while, anyways!). After picking strawberries with my kids each summer, this Easy Strawberry Chia Seed Refrigerator Jam is always a must-make — it has become a beginning-of-summer tradition for us.”

– Gwen from Delightful Adventures

 Hawaiian Cream Popsicles

“This is one of our family’s favorite recipes to eat because whether you are mowing the lawn or lounging by the pool, these delicious popsicles are sure to cool you down.”

– Audra from Cherished Bliss
