Getting Ready for Back to School

With the back-to-school season ahead of us, I’ll be sharing some helpful tips here at The Best of this Life over the next few weeks to help you prepare for the transition from summer to September. As a parent, I know snacks and meal ideas can be a daily brainstorm! 

When my kids come running off the bus, they’re always ready for an after school snack! I mean, who can blame them, they go all day. From taking in new information to playing hard at recess, by the time they come home they’re in need of some fuel.

A healthy snack is just the thing to replenish them and tide them over until dinner. Some of our go-to options include nutritious muffins, apple slices, raisins, cheese cubes, oatmeal cookies, and smoothies!

Smoothies Are a Terrific Snack

Smoothies are a long time family favourite. My kids love smoothies of all kinds, including green smoothies. They are at the top of my list, because that extra handful of leafy greens helps ensure my kids are getting their daily recommended servings of vegetables. Plus, they taste delicious! 

We love pineapple green smoothies, berry green smoothies, and apple green smoothies! Today’s recipe combines tart green apples and tangy kiwis with baby spinach for a perky, puckery, lightly sweet green smoothie that hits all the right notes. 

Quick and Easy Green Smoothie Recipe

This green apple smoothie makes a delightful treat for after school and delivers a good dose of nutrients like vitamin C, vitamin K, and vitamin E. As well as minerals, including potassium and magnesium.

It only takes a few to make, so if you’re short on time, you can still whip it up. If you’re into meal planning, you can also prepare the ingredients ahead of time and freeze them into portions. In that instance, you’d just grab the smoothie pack, toss it into the blender, add some almond milk (or preferred milk), water, a touch of sweetener if you’d like (maple syrup or honey), and you’re good to go.

Feel free to add your own spin on it with a sprinkle of cinnamon and nutmeg, or half of a banana for a sweeter smoothie.

Description

A tangy and subtly sweet green smoothie for after school snack time!


Ingredients

Scale
  • 2 green apples (peeled and chopped)
  • 4 kiwis (peeled )
  • 1 1/22 cups baby spinach
  • 2 cups almond milk
  • 6 ice cubes
  • 1/2 cup filtered water (optional)
  • 12 Tbsp maple syrup or honey (optional)

Instructions

  1. Place all ingredients (except water) in a high-powered blender. Blend until smooth. Add water if the smoothie is too thick and blend again until smooth. Serve and enjoy!

Notes

This recipe makes 2 large highball glasses or 4 lowball glasses.
