Pineapple Coconut Smoothie


What a beautiful sunshiny day! As I was saying yesterday, I wish we could skip straight through to Spring.  However, we are expecting 10 cm of snow this week…. I guess we have a little more time ahead of us before the bluebirds sing. Oh well, those fresh snowflakes can be quite pretty. Earlier today, I was over at my mom’s house working on a website design for her. After experiencing a couple of hiccups along the way, it was sure time for a break and today’s smoothie.  I chopped up some fresh pineapple and a frozen banana,  added a few tablespoons of unsweetened coconut, almond milk, and a touch of cinnamon – creating a healthy version of one of my favorite tropical beverages, pina colada.  What a sensational treat. You have to try this one!

Thank you for commenting and leaving your ideas for smoothie ingredients in my last few posts,  I will definitely be trying coconut milk in one of my next creations.  I think it would be delicious in this recipe, I just didn’t have any on hand! Next time  🙂 I hope you enjoy this one as much as we did!

Pineapple Coconut Smoothie
Makes 2 large tumblers

1 cup of chopped fresh pineapple  (you can also use water packed canned pineapple, drained)
1 frozen banana
2 rounded Tablespoons of shredded unsweetened coconut
1/2 cup almond milk
1/2 teaspoon of cinnamon
4-6 ice cubes
  1. Peel and cut pineapple.
  2. Quarter one frozen banana and remove from peel.
  3. Add all ingredients into the blender
  4. Blend on medium-high for 2 minutes, or until smooth
  5. Pour into glasses, garnish with pineapple and fresh shredded coconut.
  6. Enjoy!

  2. Emily, this has just made my day! My two fave ingredients all in one yummy drink 🙂 Thanks for stopping by yesterday by the way! Yeah I hear ya about the makeup. I don’t even have kids but ever since I started working form home, I’ve started cutting back on my usual. And my usual being eyeliner and mascara! The Nars Freshening Lotion is great.   3. This was such a perfect tasty combo smoothie! I ended up with a little leftover, stuck it in the fridge and the next morning it was as yummy as if I had just made it! I am so going to wow my guest with this one come Summer time!
