Description

Sweet spiced pears with an oat cobbler topping serve up one scrumptious dessert.


Ingredients

For the pears

  • 7 bartlett pears, washed and sliced
  • 1/4 cup raw sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

For the cobbler

  • 1 cup of brown rice flour
  • 1 cup of white rice flour or coconut flour
  • 1/2 cup of gluten-free oats
  • 1 1/2 teaspoons baking powder
  • pinch of salt
  • 1/2 cup of raw sugar
  • 8 Tablespoons of creamy virgin coconut oil (refrigerate to get creamy texture) or butter
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 375 F.
  2. In a large baking dish (I used Le Creuset Round French Oven 7 1/4) place sliced pears.
  3. Toss lightly in raw sugar, cinnamon and nutmeg.
  4. In a medium bowl, combine together flour, oats, sugar, baking powder and salt.
  5. Add in virgin coconut oil and mix until little round clumps form.
  6. In a separate small bowl, mix the eggs with the vanilla until beaten.
  7. Pour into the cobbler mixture until dough starts to form.
  8. Use your hands to mix it together if necessary.
  9. Top the pears with the cobbler mixture.
  10. Bake covered in the oven for 30 minutes and remove cover for the last 15 minutes.
  11. Allow to cool slightly before serving.
  12. Serve with coconut whipped cream and fresh nutmeg.

Notes

  • This cobbler would be equally lovely with apples.
