Easy Weeknight Dinner: Fish Curry

Description

Quickly make a delicious restaurant-style fish curry at home with High Liner® Pan-Sear Selects® and staple ingredients from your pantry. It’s an easy weeknight dinner that hits the spot and the whole family will enjoy! 


Ingredients

  • 4 fillets, 500 g High Liner® Pan-Sear Selects® Traditional Haddock
  • 1 Tbsp extra virgin olive oil
  • 1 red onion, chopped 
  • 2 garlic cloves, finely grated
  • 1 2” piece of ginger, finely grated
  • 12 Tbsp red curry paste 
  • 1 tsp ground turmeric 
  • Kosher salt, to taste
  • 1 ¾ cup crushed tomatoes (14 oz can)
  • 1 ¾ cup unsweetened coconut milk (14 oz can)
  • 1 cup vegetable broth
  • Rice or naan bread

Optional for serving: 

Fresh cilantro, grated ginger, sliced red onion, lime wedge, rice, or naan bread  


Instructions

  1. While the fillets are cooking, heat oil in a large pot over medium high heat and fry garlic and onions for 5 minutes. 

  2. Add in ginger, curry paste, and turmeric. Stir for 1 minute. 

  3. Add in crushed tomatoes, bring to a simmer and reduce heat to medium. Cook for 5 minutes, stirring regularly. 

  4. Pour in broth and coconut milk, continuing to stir. Add a pinch of salt. Bring to a simmer and then lower heat to medium-low. Cover for 8-10 minutes to cook. Stir as needed. 

  5. Serve curry in bowls with rice or naan bread. Place fillet over curry and optionally top with fresh cilantro, grated ginger, thinly sliced red onion and/or a side lime wedge for a squeeze of additional flavour. Enjoy!
