Watermelon Mint Refresher Smoothie

It’s a gorgeous day today! We just came back from a long walk, enjoyed a delicious smoothie packed with good stuff and I just found out I made it in today’s FoodBuzz Top 9 (out of 13,000+ posts) for my gluten-free berry crumble. This day is awesome already and I know it’s just going to keep getting better. I’m looking forward to hanging out with my family and being outside all day. It’s a beautiful breezy one, perfect to spend  by the water and have a picnic 🙂 
Before I run off into the sunshine, I promised you a super smoothie that will really get your taste buds popping. Watermelon and mint are the key ingredients in this refresher and make for a tasty combo.

The other ingredients, that add just the right flavor, are a peach and some carrot juice. They are subtle enough, but bring some elements of sweetness that blend wonderfully with the main duo.

On a beautiful Summer day like today, give this recipe a whirl – it won’t disappoint!!

Watermelon Mint Refresher
Serves 2

2 cups of watermelon, cubed and seeds removed
1 peach, peeled and cut up
1/4 cup carrot juice
1 Tbsp of fresh mint leaves, finely chopped
1 cup of almond milk
1/2 tsp of organic vanilla extract
1 Tbsp of chia seeds
3-5 ice cubes

  1. Wash and prepare fruit and mint leaves.
  2. In a blender add cubed watermelon, mint, cut up peach, chia seeds, and vanilla.
  3. Then pour the carrot juice and almond milk over it.
  4. Blend on medium high until smooth (around 2 minutes).
  5. Add in ice cubes at the end, use ‘ice crush’ mode.
  6. Serve in tumblers, garnish with mint leaf. Enjoy!
