Peanut Butter Sugar Cookies

“Emily Lynne Smith – look outside quickly!!” my husband called from the kitchen.
The way he said my name,  I thought a giant flying bat was surely coming towards us in
the sky.  I thought it was something serious. Thankfully it wasn’t so.  It was something light.
It was something soft and fluffy.  It was something beautiful. Magical. It was snow! 
My hubby is from Tennessee, and although he’s seen snow before, each time he gets pretty
excited about it.  He did miss the entirety of last Winter, posted in the North Arabic Gulf –
so I can’t blame him for dreaming of cold weather and snow forts.

My son watched the snowflakes fall in amazement.  He met snow for the first time last year,
but now at 13 months old, his experience is completely brand new.  I can’t wait until there is
enough fluff on the ground to go roll around in it and make snow angels with him.

We decided that we needed to celebrate the snow with some cookies and cocoa.  We’re
into celebrating just about anything and we do our best to find an occasion to celebrate as
often as possible! What can I say, we like good times and try to see the beauty in the little
things each day.  So, I made an old favorite – peanut butter sugar cookies.  This recipe is just
so awesomely easy to make, and pretty mmmmm…tasty too – in fact, these cookies are truly perfect
for this time of year.  Hearty & sweet, they tend to fill you with that cozy comfort feeling that is
just right when the weather outside is frightful but the fire is so delightful.
I like making these around Christmas too, giving them an extra festive touch by rolling them
in red and green sugar before baking.

Little A. was sure happy to be the recipient of his very own cookie and a sippy cup full of
almond milk to wash his yummy treat down.  And my husband, well, let’s just say…
he had his share and was pleased as can be, watching the snow come down.

Gluten-Free Peanut Butter Sugar Cookies
Makes 18 


1 cup organic (gluten-free) oat flour
3/4 cup natural crunchy peanut butter (room temp)
4 Tbsp vegetable or olive oil
1 tsp baking soda
1/2 cup brown sugar
1 egg
1 Tbsp cinnamon
1 tsp vanilla extract
1/4 cup raw sugar

In a large bowl, mix oat flour, baking soda and cinnamon.  In a separate medium sized bowl,
whisk egg, add in sugar, olive oil, vanilla and peanut butter.  Mix on low with a hand mixer
(or use a fork and do it by hand).  Pour wet ingredients into dry (in large bowl)
and stir until well blended. You may want to use your hands for that last part to get the
dough well mixed.

Preheat oven to 375F. Line two baking sheets with parchment paper.
Make well-rounded teaspoons of the dough and using your hangs, roll into balls.
Dip the top of the balls in sugar, place on parchment paper and press down with a fork –
making a criss cross pattern on the top of the cookie.  Repeat until all dough is used.
Makes about 18 cookies.

Bake for 10-12 minutes. Let cool and enjoy!!

  1. I live in Iceland and still no snow. Very unusual. But I know it stays forever when it comes, so I am ok with it 🙂 I will try this cookies, seem delicious!

  2. These cookies were the perfect way to celebrate the snow! I live in Florida now, but used to live in Ohio and still visit frequently for most Christmases and I always hope for some snow. There is nothing better than being warm and cozy in your house with your family while watching the beautiful snow falling outside!
