Makes 1 loaf
1 1/2 cups gluten-free flour (3/4 cup oatmeal flour and ¾ cup rice flour.)
1/2 cup raw sugar (or sugar equivalent)
1 tsp baking soda
1 tsp baking powder
½ tsp xantham gum
1 tsp salt
1 tsp cinnamon
1 tsp cloves
1 tsp nutmeg
1 cup pumpkin puree
1/3 cup oil (try virgin coconut oil!)
2 eggs
