Gluten-Free Apple Cranberry Oatmeal Muffins

 Yesterday I was a guest on CTV’s Ottawa Morning Live  and got to bake some
 yummy gluten-free muffins just about as fast as one can!  It was a lot of fun and
 it was really nice of them to invite me on the show.  In the video, the recipe seems
 short, but it does make twelve normal sized muffins.  That said, the batch I whipped up
 on tv made nine large muffins (because I over filled the liners) – so whichever is your
 preference!  They are perfect for breakfast and snacks on the go 🙂

Gluten-Free Apple Cranberry Oatmeal Muffins
Makes 12
1 and 1/4 cup of gluten free oat flour
1 Tbsp baking powder
1/2 tsp baking soda
pinch of salt
1 rounded tsp cinnamon
1/3 cup raw organic sugar
3 Tbsp oil  (olive or coconut)
2 eggs
1 large grated apple
3/4 cup of halved fresh cranberries

In a medium sized bowl, mix together all dry ingredients.
In a small bowl, whisk eggs, add in sugar, oil, apple and cranberries – pour into dry ingredients
and mix well.  Fill paper liners about 2/3 full and bake for 18-20 minutes at 350F. Enjoy!

    Great segment, though I kind of don’t like the guy, he was rushing you from one question to the other!
