Yesterday we made Maple Taffy on snow during our visit to see Nana. She had a big jar of maple syrup ready to be boiled and turned into a favourite childhood treat. As the syrup boiled, memories of going to the Sugar Bush during class trips and as a family flooded back. The smell is heavenly and when it reaches the right temperature, it’s ready to pour over packed fresh snow and turn into something delicious and sticky, called maple taffy! Aiden was overjoyed that we were playing in the snow and making candy. It was too much to handle, he was bursting at the seams with happiness. It was just the sort of family fun we needed, after a rather helter skelter week.

Maple Taffy on Snow
- Pour 1 1/2 cup of pure maple syrup into a deep stainless steel pot and bring to a boil. Then lower heat to simmer for approximately 10-15 minutes. Stir continuously. If you have a candy thermometer, bring it to a temperature of 232 degrees fahrenheit before it is ready to pour. Otherwise, a way to test if the syrup is ready, is to place a porcelain dish in the freezer (5 minutes) and place a drop or two of syrup on it, if it begins to thicken/harden, it’s ready for the snow.
- Make a plate of packed down snow. It’s important that it’s really packed down, so the syrup doesn’t just leak through. If it’s too fluffy, add a little bit of water on it and put it in the freezer for 15 minutes.
- Pour the Maple syrup onto the snow and put the spoon (or popsicle stick) on one end of the syrup. Let it sit for 30 seconds.
- As the syrup hardens, begin rolling the spoon. Try to keep as much snow out of it as possible. It took me a while to get the hang of it!
- Enjoy and repeat until all the syrup is used up (1 1/2 cups made about 8-10 servings).
