Cute Rainbow Sprinkle Chocolate Energy Bites for Kids

These colourful energy bites are made with wholesome ingredients like rolled oats, dates, peanut butter, unsweetened cocoa powder, and pure maple syrup! They’re an energizing and satisfying after-school snack your kids will love to eat.

You’ll never guess what gives them their donut-like texture. The secret ingredient is flaxseed meal which provides a nutritious dose of fibre, protein and omega-3 fatty acids.

Our Family Loves Energy Bites!

We’re big fans of energy bites around here (also known as snack bites or snack balls). Over the years my family and I have tried all different kinds of flavour combinations. Some of our other favourites are Pumpkin Pie Energy Bites , Peanut Butter Oatmeal Chocolate-Chip Energy Bites , Tropical Snack Bites , and Blueberry Coconut Peanut Butter Snack Bites

These chocolate peanut butter energy bites, covered in rainbow sprinkles, are no exception. They pack a healthy punch and aren’t overly sweet. You can also make them without the sprinkles and roll them in shredded coconut instead or add-in mini chocolate chips!

Quick Tip: To make them allergy-friendly and school-safe, you can also substitute the peanut butter for sunbutter (sunflower butter) which is made from sunflower seeds.

I shared this recipe and the steps on my Instagram stories this week and got so many messages about how yummy they looked! And they are! What’s great is how simple they are to whip up. Make them ahead and store them in your fridge for the week for easy snacking.

It’s hard to believe my kiddos will be heading back to school next week, but we’re ready! They are looking forward to seeing their friends and meeting their new teachers. And we’re all set with their new school gear and meal planning for lunches and snacks. These Rainbow Sprinkle Chocolate Energy Bites will be on repeat, no doubt!

Rainbow Sprinkle Chocolate Energy Bites

These colourful energy bites are delicious and healthy too!


  • 1 cup rolled oats
  • 3 Tbsp unsweetened cocoa powder
  • 3 Tbsp flaxseed meal
  • 1/2 cup creamy peanut butter ((use sunbutter to make these school-safe))
  • 1/4 cup pure maple syrup
  • 1/2 tsp pure vanilla extract
  • 8 medjool dates
  • pinch sea salt
  • 1/4 cup rainbow sprinkles


  1. Place all ingredients in a food process with the S-Blade attachment.
  2. Process on high for 2 minutes. Scrape down the sides if necessary, and process for another minute, until mixture forms a cookie dough texture.
  3. If the mixture is too dry (oats and flaxeed meal can absorb liquid quickly) – add a teaspoon of water at a time until you reach cookie dough texture.
  4. Roll into aproximately 1 1/2 inch balls.
  5. Place sprinkles in a shallow dish and roll each ball to cover with sprinkles. If they aren't sticking, use your finger to wet each energy bite with a bit of water before dipping in sprinkles.
  6. Place in the freezer for 15-20 minutes to set, or the fridge for 30 minutes.
  7. Serve and enjoy!
  8. You can store these energy bites in an air-tight container in the fridge for up to a week, for ultimate freshness.
